Production Head Chef

About the role We are seeking a Production Head Chef to play a pivotal role in the delivery of high-quality, nutritious meals within MiCare’s central production kitchen. The successful incumbent will oversee the full spectrum of cook-chill meal production for aged care residents, will manage the MiMeals frozen meal line, and coordinate the catering function across MiCare’s sites in Victoria. The position will work closely with the Food Services Manager and a team of dedicated chefs and kitchen staff. The Production Head Chef ensures that food production is consistent with MiCare’s quality, safety, and compliance standards, while driving innovation, efficiency, and cost-effectiveness. Some of the key responsibilities of the role include: Lead and manage daily production of cook-chill meals for aged care facilities in accordance with dietitian-approved menus. Oversee MiMeals frozen meal production including preparation, packaging, labeling, and quality checks. Supervise kitchen staff, including chefs, cooks, and production assistants. Provide hands-on support and training to ensure adherence to recipes and procedures. Ensure full compliance with food safety and hygiene standards (HACCP, Safe Food Handling). Manage stock control including ordering, receiving, rotation, and minimising wastage. Qualifications Certificate III or IV in Commercial Cookery (or equivalent). Skills: Long standing experience in high-volume catering or production kitchen, ideally in aged care or healthcare. Proven leadership experience in supervising and motivating a diverse team. Experience with cook-chill and/or frozen meal production is highly desirable. Strong culinary skills and attention to detail. Ability to work under pressure in a fast-paced environment. Excellent organisational, planning, and time management skills. High standard of communication and interpersonal skills. Passion for delivering nutritious meals that meet the needs of elderly and vulnerable populations. Why work for MiCare?
