Head Chef - Premium Casual Dining (Eastern Suburbs, Sydney) JRM Hospitality is currently recruiting for an experienced, driven and passionate Head Chef for a brand-new premium casual restaurant opening in Sydney's eastern suburbs this October. Showcasing Levantine-inspired cuisine built around seasonal, quality produce and a share-plate style of dining this venue is set to become a much loved venue in the Sydney dining scene. We are seeking a Head Chef with proven experience in Levantine flavours and techniques to lead the kitchen from the ground up. With a brand-new kitchen, excellent remuneration, and full support from an engaged and passionate owner, this is an opportunity to shape the food direction and build a high-performing team in a venue aiming for a Chef's Hat. As Head Chef, you will oversee all aspects of the kitchen operation, from menu development and supplier relationships to team recruitment and mentoring. This is a chance to put your stamp on a concept from day one, creating a venue recognised as the best in the suburb. Key Responsibilities Lead the opening of a brand-new kitchen, establishing processes, systems, and standards from the ground up. Develop and deliver a seasonal, produce-driven Levantine menu that balances creativity, authenticity, and commercial success. Recruit, train, and mentor a kitchen team, fostering a positive and professional culture. Maintain consistency and excellence in food quality, presentation, and service flow. Manage kitchen operations, including stock control, ordering, supplier relationships, and food cost targets. Ensure compliance with food safety, hygiene, and WHS standards at all times. Collaborate closely with the owner and FOH team to align menus with the overall brand vision and guest experience. Drive efficiency in labour and food costs, while still achieving the restaurant's goal of securing a Chef's Hat. Stay on top of current food trends, bringing innovation and inspiration to the offering. Represent the kitchen as a hands-on leader, leading by example during service and supporting a strong team culture.
