Full time | For-purpose organisation | Onsite role in Dandenong South The Role As the Night Shift Manager, you will oversee all aspects of night production, ensuring quality, safety, and team performance. From mixing and molding to fermentation and final output, you will be the driving force behind our night operations. We are seeking a passionate and experienced Night Shift Bakery Manager to lead our dedicated team of 40 bakers in producing high-quality, handcrafted bread products. This is a hands-on leadership role in a fast-paced, high-volume bakery where traditional techniques meet modern efficiency. Key Responsibilities Key areas of responsibility include: Lead and supervise a team of 40 during night shift operations Ensure accurate production in line with artisan techniques and daily schedules Maintain high standards of quality control and food safety (HACCP, WHS) Oversee dough preparation, mixing, scaling, and molding according to artisan methods Provide training, coaching, and performance management to team members Conduct shift handovers and communicate production updates with day shift management Complete shift reports, manage incidents, and support process improvements About you We are looking for a passionate leader with experience in high-volume food production, ideally in a bakery setting. You’ll bring a hands-on approach to team management and a strong focus on safety, quality, and efficiency. AQF Certificate III in Food Processing or equivalent Proven experience in a bakery or food manufacturing environment Strong leadership and communication skills Hands-on experience with artisan bread production preferred Strong understanding of HACCP, WHS, and food safety regulations Ability to lead and motivate large teams in a fast-paced setting Experience troubleshooting production issues and improving processes Excellent communication and organisational skills Flexibility and resilience to manage night shifts and physical tasks Why work with us?
