Our aim is to bridge the gap between outstanding quality seafood, steaks and casual dining prices. They require a Chef to join their team in Crows Nest, NSW. Key responsibilities include : Establishing daily, weekly and monthly routines to maintain and upkeep the Salmon & Bear kitchen cleanliness to the highest standards; Estimating food and labour costs; Managing the daily running of the kitchen in coordination with the Restaurant Manager and Front of House team; Managing the rostering of kitchen staff; Preparing and cooking menu items as per the Salmon & Bear food standards: - Food quality and presentation; - Grilling of fish - Crispy Skin, Poached inside, smokey flavour; - Portion sizes and control; - Food safety - day dotting and temperature control; FIFO stock rotation. Stock rotation and kitchen supply organisation; Training and coaching all kitchen team members; Working closely with the owners and kitchen staff on a daily operational basis in terms of menu planning, specials and promotions. To be considered you will need a level of skill commensurate with a relevant AQF Diploma level or higher qualification and at least one year of relevant employment experience OR at least three years of relevant employment experience as a Chef.
