Salt Meats Cheese (â€˜SMCâ€™) is an Australian company with Italian restaurants currently in several locations across New South Wales and Queensland. As purveyors of gourmet Italian produce, our restaurant group is renowned for its honest cooking of quality ingredients and sharing it with restaurant customers and cooking class participants. The full-time (38hr/week) Sous Chef position will be based at our full-service flagship restaurant venue in Gasworks.
You will be responsible for the following duties on a daily basis: â€¢ Reports to head chef â€¢ Managing the kitchen and supervising kitchen staff â€¢ Preparing and cooking all menu items â€¢ Creating recipes and demonstrating techniques to cook staff in the kitchen â€¢ Ingredient inventory and ordering of stock â€¢ Supervising and overseeing cook staff in the kitchen during service â€¢ Managing the presentation of meals and quality of meals served in the dining areas â€¢ Training of staff in cooking techniques and new recipes â€¢ Managing food quality in storage, including fridges, cool rooms â€¢ Mitigating food wastage, maximising yield from food products â€¢ Maintaining personal equipment; knives and uniforms â€¢ Adhering to our Food Preparation, Handling and Storage Policy â€¢ Maintaining Occupational, Health and Safety (OH&S) practices in the kitchen â€¢ Attending and participating in restaurant staff meetings A base salary of $55,000 - $65,000 excluding superannuation is on offer for this role. Required skills and attributes: â€¢ A level of skill commensurate with an AQF Associate Degree, Advanced Diploma or Diploma plus 2 yearsâ€™ experience or at least 3 yearsâ€™ of experience as a Sous Chef. â€¢ Team Leader â€¢ Experience working in a busy establishment with a high volume â€¢ Proven experience in a similar role â€¢ Highly organised and ability to multi-task â€¢ Well developed communication skills and fluent in English.
