About the role Hakea Prison, situated in the south-east metropolitan area of Perth, is the primary remand, receival and assessment prison for male metropolitan prisoners. As such, it is the first point of contact for the majority of prisoners entering the prison system. It is unique as a facility having the dominant proportion of its population as unsentenced prisoners.
Hakea Prison has three guiding functions: To receive and house all male remand prisoners in the metropolitan area, including long term remand prisoners from regional areas; To provide a receival facility for newly sentenced male prisoners in the metropolitan area requiring assessment prior to alternative placement; and To act as a transit and dispersal prison as required. The Senior Cook Instructor is responsible for: The supervision of staff within the kitchen. The production of meals, training and supervision of prisoners involved in food preparation Control of the food budget, development and implementation of the menus within the department's guidelines.
Ensuring that the kitchen area complies with Health and Occupational Health and Safety regulations. Provision of development opportunities for prisoners to acquire vocational and work skills to enhance their capacity to gain and retain employment on release. Provision of continuous and meaningful activity for prisoners thereby securing a more effective management of prisons.
Provision of productive work for prisoners that will assist in reducing the cost of running the Prison. Eligibility to Apply Possession of a relevant Trade Qualification as below: Certificate IV in Hospitality (with Commercial Cookery or Catering or Kitchen Operations speciality) and/or Certificate IV in Commercial Cookery and/or Certificate IV in Catering Operations Note: Nationally recognised Australian qualifications or overseas qualifications that have been verified in Australia for equivalency will be accepted. Complete the Employment Profile Assessment as determined by the Department.
